Cocoa butter known as Theobroma oil, is a pale yellow vegetable fat that is derived from the Cocoa beans, Cocoa nibs. The process is very interesting, firstly the beans are fermented and dried, secondly have the roasted Cocoa beans and finally separated from their shells. > 50% of the remaining product is pure Cocoa butter, Chocolate liquor is then pressed to separate the butter from the liquor.
